Applications
Le fumarate de sodium est utilisé comme régulateur d‘acidité dans la transformation des aliments et comme accepteurs d‘électrons terminaux dans la culture de certains microorganismes anaérobies. Il est également utilisé comme agent tampon et dispositif de réglage du pH dans les produits cosmétiques et de soins personnels. De plus, il est utilisé comme additif alimentaire.
